Since you are the shooter, do you ever WOTCO with this play? What do you see as the advantages and disadvantages of doing that? The Sheriff would certainly be the big one but if you are using your normal set and not an all 7 set would there be other advantages/disadvantages of working?

Well, the way I play it, this situation would not apply. I only do it on my initial come-out roll so I have no bets up to "work", beyond my pass-line bet. And I generally only play it if the 5, 6, or 8 become the point so that I don't have another number to cover.
However, unless you are using a come-out specific set, then it does not really matter when you set it up. No real advantage or disadvantage since the success or failure hinges on the next toss, regardless of come-out or not.

A couple more ideas regarding the IC, or in other words my personal rules on how I play the IC:
~ I want a 1:2 or 1:3 ratio of Field to Box-Numbers. So, if I have a $5 Field, I want a $10-five, $12-six, $12-eight, and prefer a $15, $18, $18. This way, when the 6 rolls, I have something with which to work. For example if the six rolls, I lose $5 in the field, and win $14… I use $5 to replace the field for the next roll and press the six $6, putting $1 in my rack.
~ When I see a trending toward my known crap number bias, I like to start using the field winnings to press inside numbers. For example I toss a Yo and win $5 on the field bet, I take $1 from my rack and press whatever number has been hitting (usually the 8 for me). I try to focus on numbers that are hitting, vs pressing all numbers evenly.
~ At some point I stop the field betting and rely on regular inside number activity. Especially if I start trending back inside.
~ I like to use the IC as a tool, but not a primary betting strategy. I use it because I know my trending tendencies and leverage them.

Well stated ...I like that you stated incorporating a ratio of Field to Box-Numbers
That alone is with "some air" between the box #'s and THE FIELD" wager
you are able to collect on each and every hit ...

One VERY STRONG game plan...
..which would work for both minimum and maximum level WAGERS.....
The 5:1 ratio BUY IN to Total $ value committed to the I C WAGER in this example...
While I use a similar tactic ,I have frequently used it on other shooters and accepting
THE RISK OF LOSS to the SEVEN. my election is to TAKE MY WAGER DOWN after one ROLL.
Since my money at risk is usually larger than the examples you or I presented,on those
hands I feel comfortable , I may switch to $96 across with a $4 HORN as I am comfortably ahead at that time....
For those hands my wager is lost to THE SEVEN,I wait and watch two or three shooters before
electing to RETURN TO MY BASIC WAGER or SWITCH TO THE DARK SIDE or do a walk off....

Once you have establish the come out number AND placed your bets on the numbers 5-6-and 8
and the FIELD, Let me tell you what you will do after you throw the dice and you win
on the FIELD and the numbers 5-6-and 8.
When you win on the field THE DEALER will pay you one unit. now you have 2 UNITS, now you will bet those 2 units again on the field-- you win again the field bet--now the dealer will pay you 2 UNITS.
By betting this way you have won 3 units--$75 dollars.
Now you will place the same bet on the field BEFORE you throw the dice again. 1 UNIT BET.
This is the way you will bet after every field bet win, over AND over AND over.
Now let me tell you HOW to bet when you win a bet on the 5 OR 6 OR 8.
When you shoot the dice AND you throw a 5--YOU win $7 Dollars.
Before you throw the dice again YOU make the following bet on the field,
You take the 7 dollars you won AND add 2 dollars more-TO the 7 dollars you won and make your next bet be 9 dollars.
Now you throw the dice AND you throw a field number, You win 18 dollars.
You win $18 dollars - You had a 7 $dollar bet--$18-7 + $11 dollars. you won $11 dollars on that bet.
So you won $11 dollars X 5 equals a $55 DOLLAR WIN.
After this win you start all over again, making a $5 dollar bet on the field.

I've seen a lot of posts over on the FaceBook craps groups of late regarding the Iron Cross - which I have lovingly dubbed the Iron DOUBLE Cross. LOL. Let's risk $100 plus to win $15 - $45. Of course, you know me. I'm thinking about hedge betting all of the time. So what about a $100 DP or DC combined with a $25 five, $30 six and eight, and $15 in the Field? Any other weird variants of the Iron Cross out there? Think outside the box and share them, folks. Meanwhile, I think I'm going to go Trademark "The Iron Double Cross." LOL.
